Cichorium intybus - Chicory – Also known as Blue Sailors or Blue Dandelion, are woody herbaceous perennials that are a vibrant addition to any garden. From the Daisy family, they are bright blue flowers that have light and dark shades of color. They bloom from June to September and attract butterflies and bees to the garden. They can be grown in either partial sun or partial shade, can grow up to 6 feet tall, and are drought tolerant once established. The showy blooms open and close with sun exposure and are self-seeding. They are edible but bitter! The roots are dried, ground, or used as a coffee substitute.
