Eryngium Campestre – is a perennial that blooms from July to September. This showy plant has thorny green grey leaves that sit below a spherical spiny flower head that has a greenish hue. It resembles a thistle. They thrive in full sun and can grow up to thirty one inches tall. They are drought and heat tolerant. They also attract bees and pollinators while being deer and rabbit resistant. The roots have been known to be edible but I would do research to see how. In folk medicine they have been used to treat digestive issues. They are good for rock gardens, beds, pastures, road sides and dried flowers. They are native to Africa and Europe.
